While designing multi-channel dataloggers (8 to 16 differential analog inputs or even 3-wire RTD input), what is the best approach for ADC – Analog to Digital Conversion?

        In general, we see
        1) Multiplexed input (lesser cost, lesser sampling rate)
        2) Dedicated ADC circuit for each input

Considering just 1Hz sampling rate (record 1 digital output from each sensor every second), any suggestions of boards or comparisons of above approaches?
